Recipe: Pistachios & Raisins Banana Nice Cream

INGREDIENTS

2 PISTACHIOS & RAISINS SNACK PACKS (CONTENTS)

6 - 8 FROZEN RIPE BANANAS (PEELED AND CHOPPED INTO THIRDS BEFORE FREEZING)

1 CAN PREMIUM COCONUT MILK (REFRIGERATED OVERNIGHT, RIGHT SIDE UP)

1/2 TSP PURE VANILLA EXTRACT

1/2 TSP CEYLON CINNAMON

1/4 CUP COLD WATER/COCONUT WATER

A PINCH OF PINK HIMALAYAN/SEA SALT(LESS THAN 1/8 TSP)


INSTRUCTIONS

  • FLIP REFRIGERATED CAN OF COCONUT CREAM UPSIDE DOWN TO OPEN FROM BOTTOM AND POUR OUT OR DISCARD OF THE SEPARATED LIQUID LEAVING THE COCONUT CREAM AT THE TOP OF THE CAN.

  • PLACE SEPARATED COCONUT CREAM INTO A BOWL AND WHIP WITH A WHISK OR HAND/STAND MIXER UNTIL IT REACHES PEAK FIRMNESS.

  • ADD FROZEN BANANAS, COCONUT WHIP, VANILLA, CINNAMON, WATER AND SALT TO A FOOD PROCESSOR AND PULSE UNTIL INGREDIENTS COMBINE TO A SMOOTH CONSISTENCY.

  • DO NOT PROCESS FURTHER.

  • TOP WITH YOUR DESIRED AMOUNT OF ‘PISTACHIOS & RAISINS’ AND SERVE IMMEDIATELY OR STORE IN FREEZER IN AN AIRTIGHT, FREEZER FRIENDLY CONTAINER.
